Aunt Bev’s Beautiful World 

My name is Bev Kracke,I’m 80 years old and  I’ve got a head full of kowedge and as much or more of nonsense.  I’ve decided to start an internet business. It is going to be a blog & I’m going to cover multiple topics that interest me & also be of interest to you.. My website is AUNTBEVSBEAUTIFULWORLD.COM & my part time husband & roommate Bob,  has volunteered to help, so here goes.  I would like for you to start thinking green. clean and thrifty.   Our world is being destroyed bit by bit and it certainly starting to show.  I’m inviting you to join me wth new ideas, Nonsense and what ever else you want you feel like sharing.  I would like to share whatever you have a mind to and I would like for this to be interesting and funny,   I will have several nitches to promote sales on some things so I can hopefully make a little spending money.  I have a few good friends out there and would love to have a few more.  If you have a topic you would like to share we are here and we are game.

Cherry Fluff


1 (21 ounces) can cherry pie filling

1 (20 ounces) can crushed pineapple, drained

1 (14 ounces) can sweetened condensed milk

1 (8 ounces) container frozen whipped topping, thawed

1 (16 ounces) package of miniature marshmallows   (optional)


In in a large bowl, mix the cherry pie filling, sweetened condensed milk, crushed pineapple, whipped topping & approx 8 oz of marshmallows.  Chill in the refrigerator at least 2 hours before serving. 

                                     My Tacorita

Introduced to tacorita’s  at La Fonda’s in Omaha in the ’70s & fell in love with them. Moved in 80 & was no longer able to get them, I tried everything to duplicate the sauce & failed miserably, so I substituted green Chile for the brown sauce & they turned out very good.  My family ate & enjoyed them often & I gave the recipe to many friends & relatives.



1lb ground beef

1 package of taco seasoning

1 20 oz can of green Chile enchilada sauce

1 8oz package of shredded cheese

1 package of large burrito size tortilla’s

toppings shredded lettuce, diced tomatoes, jalapenos, salsa & sour cream.  (optional)


Brown hamburger, drain & place back in the skillet, add taco seasoning follow instructions on the package, take a 9″ x 13″ casserole dish or pan & cover the bottom with enchilada sauce. You are now ready to make your tacoritas, place a tortilla on a dinner place, place in microwave for 10 seconds (makes it easier to work with), put 3 teaspoons of enchilada sauce & spread it around on the tortilla, ad 1/4 of your taco meat, sprinkle generous amount of shredded cheese & roll it up,  (if you put your ingredients off center, closer to one side than the other, they’ll roll easier, be easier to get in & out & look better) place it in the dish or pan & do 3 more.  When you have all 4 done cover them with the rest of your enchilada sauce & shredded cheese  Preheat your oven to 350 degrees, bake for 15 to 20 minutes, or until sauce is bubbling & cheese is melted.
